Stud poker is normally played in either 5, 6 or 7 card versions:

5 – card

After an ante, each player is dealt two cards; one down (the closed or hole, card), one up (the open or up, card); then a round of betting ensues. It is followed, sequentially, by three more up-cards, after each of which there is a betting round, and the best remaining hand wins.

6 – card

The same as five card, except there is on more card, dealt down, after the round of betting on the fifth card. A player’s hand consists of the best five of the six cards dealt.

7 – card

The same as six card, except that the initial deal consists of two down cards and one up-card, before the first betting round. The fourth, fifth, and sixth cards are dealt up, one at a time, and the seventh card is dealt down. A player’s hand consists of the best five of the seven cards available to him.
